Salsa & Guac

I’m a bigger snacker – popcorn, fruit, pita chips and hummus, bruschetta, you name it. Especially on the weekends, my husband and I like to slowly graze and eat our way through the day. One of my all-time favorite snacks is my salsa and guacamole. I made this over the weekend and we demolished the two bowls by the end of the day. I’ve made my salsa and guacamole a number of times and it’s always a crowd pleaser. It’s nothing fancy, but I will say that fresh and ripe ingredients are key to good flavor.


Guacamole

Serves 2

2 avocados, smashed (I use a potato smasher)

A handful of cilantro, chopped

2-3 small/medium tomatoes, seeds removed and chopped

Juice from half of a lime

Juice form half of a lemon

Half of a jalapeño, finely diced

Salt and pepper to taste

Smash the avocado leaving only a couple of lumps. Fold in the rest of ingredients making sure they are well combined. Season with salt and pepper. Best if used within a day of making.

Salsa

Serves 2-4

A handful of cilantro, chopped

6-7 small/medium tomatoes, seeds removed and chopped

Juice from half of a lime

Juice form half of a lemon

Half of a jalapeño, finely diced

1/4 Red onion, finely diced

2 Scallions, chopped

Salt and pepper to taste

Combine ingredients, and season with salt and pepper. Adjust the amount of lime or lemon juice as needed. Good for up to three days in the fridge.
