Chili & Biscuits


We’ve been having a lot rain lately, which isn’t too unusual for this time of year. April showers bring May flowers, right? It was also the first weekend in a long time where I wasn’t swamped with homework. So on a drizzly Friday afternoon, I decided to make my kitchen a mess and cook up some hearty chili and biscuits.

Homemade Chili

Serves 2, with some leftovers

1 lb. ground turkey

1 can black beans

1 can kidney beans

1/2 yellow onion

2 garlic cloves minced

1 can diced tomatoes in juice

1 tbsp. olive oil

1 tbsp chili powder

1 tsp dried oregano

1/2 tsp ground cumin

1/4 tsp cayenne pepper

salta and pepper to taste

Sour cream (optional)

Chives or green onions, diced (optional)

Heat the olive oil in a pan over medium high heat. Add in the onions and cook until fragrant. Add the garlic and cook for 2 more minutes. Add your ground turkey, salt and pepper, and cook until the turkey is browned. Then add the seasoning and stir to coat the meat. Add the tomatoes and beans, reduce heat to low, and let it simmer for about 35 – 40 minutes. Add a dollop of sour cream and some green onions for garnish. Serve immediately.
